Black Bean + Sweet Potato Patties

I love a good veggie burger—and lucky for me, so does my meat-loving husband! We recently enjoyed a Mexican dinner and came home with a ton of leftover black beans. Rather than let them go to waste, I decided to turn them into something new. These hearty black bean burgers were born! Made with simple ingredients like sweet potato, greens, oats, and black beans, they’re packed with flavor and make an easy, delicious meatless meal. I personally love a burger bowl - greens, fries, toppings and burger sauce!

Black Bean Burger Patties

I love a good veggie burger—and lucky for me, so does my meat-loving husband! We recently enjoyed a Mexican dinner and came home with a ton of leftover black beans. Rather than let them go to waste, I decided to turn them into something new. These hearty black bean burgers were born! Made with simple ingredients like sweet potato, greens, oats, and black beans, they’re packed with flavor and make an easy, delicious meatless meal.

Ingredients

  • 1 sweet potato
  • 1 1/2 cups black beans, cooked
  • 1 cup spinach or kale (finely chopped)
  • 1/4 cup onion, chopped into big chunks
  • 1/2 cup oats
  • 1 garlic clove, chopped into chunks
  • 2 tsp cumin
  • 1/2 tsp salt

Instructions

  1. Poke holes in the sweet potato with a fork. Microwave the sweet potato until tender (I just rely on the microwave sensors) Once tender, transfer the sweet potato flesh to a large mixing bowl and mash. Leave to cool.
  2. In a food processor, add black beans, greens, onion, oats, garlic, cumin and salt. Process until coarse crumbs form.
  3. Add the bean mixture to the sweet potato and mix until combined. Scoop out ~1/2 cup of the mixture at a time and form into thin patties.
  4. Heat a large skillet with oil. Add the patties and cook until golden brown and crisp. About 5 minutes on each side.
  5. Serve however you like- on a bun, over greens! I personally love a burger bowl (greens, fries, toppings, patty and burger sauce!)
