Try this satisfying, nutritionally balanced meal with grilled chicken, roasted sweet potato, greens and the perfect dip — chimichurri. This is also perfect for kids: everyone can build their own plate, with the green sauce or not.

Ingredients

Chimichurri
  • 1/2 cup parsley, finely chopped
  • 1/4 cup oregano, finely chopped
  • 1 garlic clove, minced
  • 1/4 cup olive oil
  • 2 TBS red wine vinegar
Chicken
  • 1.5 pounds chicken breast, boneless, skinless
  • 1 lemon, juiced
  • 2 TBS olive oil
  • 1 tsp garlic powder
Perfect Roasted Sweet Potatoes
  • 2 sweet potatoes
  • 2 tsp of olive oil

Instructions

Chimichurri
  1. In a bowl combine all chimichurri ingredients, season with salt and pepper and set aside.
Chicken
  1. Combine chicken, lemon juice, olive oil, garlic powder and season with salt and pepper, marinate for at least 1 hour prior to cooking.
  2. Cook as desired, I prefer grilled using the grill plate of an air fryer.
  3. Cook to 165 degrees.
Perfect Roasted Sweet Potatoes
  1. Preheat oven to 400 degrees
  2. Cut sweet potatoes in half, drizzle with oil on all sides. place on a baking sheet covered with parchment paper.
  3. Cook for about 30 minutes or until soft.

Notes

I love to serve this bowl with arugula or other greens! This is a perfectly balanced, flavorful meal!
