Chimichurri Chicken and Sweet Potato Bowl
Need a non-boring chicken recipe? This is it. Give me a delicious sauce or dip any day, but especially a super-herby one. Try this satisfying, nutritionally balanced meal with grilled chicken, roasted sweet potato, greens and the perfect dip — chimichurri. This is also perfect for kids: everyone can build their own plate, with the green sauce or not.

Ingredients
Chimichurri
- 1/2 cup parsley, finely chopped
- 1/4 cup oregano, finely chopped
- 1 garlic clove, minced
- 1/4 cup olive oil
- 2 TBS red wine vinegar
Chicken
- 1.5 pounds chicken breast, boneless, skinless
- 1 lemon, juiced
- 2 TBS olive oil
- 1 tsp garlic powder
Perfect Roasted Sweet Potatoes
- 2 sweet potatoes
- 2 tsp of olive oil
Instructions
Chimichurri
- In a bowl combine all chimichurri ingredients, season with salt and pepper and set aside.
Chicken
- Combine chicken, lemon juice, olive oil, garlic powder and season with salt and pepper, marinate for at least 1 hour prior to cooking.
- Cook as desired, I prefer grilled using the grill plate of an air fryer.
- Cook to 165 degrees.
Perfect Roasted Sweet Potatoes
- Preheat oven to 400 degrees
- Cut sweet potatoes in half, drizzle with oil on all sides. place on a baking sheet covered with parchment paper.
- Cook for about 30 minutes or until soft.
Notes
I love to serve this bowl with arugula or other greens! This is a perfectly balanced, flavorful meal!
