Dark Chocolate Raspberry Bites

If you’re a fan of Tru Fru this recipe is for you! I personally need a sweet treat every night or after lunch…or both! Keep these in the freezer for the perfect treat that also packs in antioxidants and some fiber!

If you're a fan of the delicious Tru Fru frozen berries coated in chocolate then you will LOVE these! Plus these pack extra fiber and are less expensive than the store-bought alternative.

Ingredients

  • 2 cups frozen raspberries (or a mixed blend works well too!)
  • 2 TBS chia seeds
  • 1 1/3 cups dark chocolate chips
  • Flaky sea salt (if desired)

Instructions

  1. Microwave the berries until soft, mash with a fork, and add the chia seeds, mix until combined. Place the mixture in the fridge for about 20 minutes or until the mixture has thickened.
  2. Line a baking sheet with parchment paper.
  3. Use a tablespoon, plop the raspberry chia mixture into 12 blobs on the baking sheet. Freeze until set. About 8 hours or overnight.
  4. Once frozen, melt the chocolate over a double boiler. Dunk raspberry blobs into the chocolate mixture. Top with flaky sea salt if desired. Return to the baking sheet and place in the freezer until set.
  5. Keep in the freezer and enjoy nightly!
